The other day I made my first vegan Spanish omelette. Now, for most people, this would not mean much, just another recipe. For me, however, this was an AMAZING discovery! And I had to type that in caps because it was. I am extremely happy that now I can make a vegan Spanish omelette. As a Spaniard, I grew up with it, it was always my favourite and it takes me back home (to my mum's kitchen) every time I have it. When I went vegan a few months ago, Spanish omelette was the only thing that actually made me really sad to think I could never have again. But those days are over! Because this guy tastes sooo similar to the "real" thing.


You cannot even tell the difference when it is in a sandwich! (As above).  I have tried a baked tofu one and most people (the few vegans I have met so far) would make it that way, but I think this is the way Spanish vegans make it. And for me, that means something. I took the recipe from this video, although it is in Valencian (or Catalan).
It is simple though, if you know how to make a proper Spanish omelette. You just need to substitute each egg for a tablespoon of chickpea flour (so if you were going to make a 4-egg omelette, you put 4 tablespoons of flour) and then add sparkling or still water (I used sparkling) until the consistency resembles eggs'. I think I used about half a small bottle of water.

I cannot wait to have this again!

Cupcakes, etc.

So last night I baked these amazing cupcakes (if I may say so myself) that turned out great and could not believe how extremely super delicious they were! The recipe is the basic chocolate cupcake from Vegan cupcakes take over the world with the chocolate buttercream frosting and it is great!


I have to say, I am pretty certain that these are the best cupcakes I have made so far. I cannot wait to try all the other recipes in the book as this is the first one I make.


Last weekend I went to No Direction Home Festival which was really good fun. I ate loads of really nice vegan food but unfortunately did not get the chance to take a picture of any of it (useful!).
Instead, I will leave you with a picture of a very nice little fellow I met there.

Hi! My name is Violet. As I find vegan blogs extremely helpful and interesting, I decided to create one myself and add my two cents. I am not really sure what to write in this first post so I will just say that I am going to be posting pictures of the nice foods I eat, bake and cook and probably other kinds of stuff too, I will see how it goes. Hopefully someone will find it useful!
